    One of my very favorite mixes which is no longer found in the newer MAM cookbooks. I now make this in the food processor, using quick oats, and the mixture comes out smoother. A handy mix to have for Sunday breakfast. See recipes using Oatmeal Mix. Rating: *****


    Recipe



    3 cups flour
    3 1/2 teaspoons baking powder
    1 1/2 teaspoons salt
    1/2 cup sugar
    1 cup brown sugar, packed
    1 1/2 cups shortening
    3 cups rolled oats
    In a large bowl, combine flour, baking powder, salt and sugar. Stir in brown
    sugar. Cut in shortening until evenly mixed.

    Place in a large airtight container, seal and label. Use within 10 to 12 weeks.

    Oatmeal Muffins using Oatmeal Mix

    1 large egg
    2/3 cup milk
    3 cups Oatmeal Mix


    Recipe


    Preheat oven to 400 degrees F.

    Grease muffin tins. Put Oatmeal Mix in a medium bowl. Combine egg and milk. Add
    to mix. Stir until just moistened; batter should be lumpy. Fill muffin tins 2/3
    full.

    Bake 15 to 20 minutes or until golden brown.
