MUFFINS:
1 cup all purpose flour
1/2 cup firmly packed brown sugar
1 tblsp baking soda
2 cups Wheat Chex brand cereal, crushed to 1 cup
1/2 cup mixed nuts, chopped
1 large egg, beaten
3 tblsps vegetable oil
1 (8 oz) can crushed pineapple in unsweetened juice, undrained
1 banana, mashed
1/4 cup jelly OR preserves, any flavor
TOPPING:
1 (8 oz) pkg cream cheese, softened
1/3 cup powdered sugar
1/2 tsp pure vanilla extract
2 cups candy &/OR fresh OR dried fruit, optional
Recipe
Grease or paper-line 14 - 2-1/2" microwave-safe muffin cups.
In large bowl, mix flour, brown sugar, baking soda, cereal & nuts.
In med bowl, mix egg, oil, pineapple with juice & banana; add to dry ingredients; stir just until moistened. Spoon 1 tblsp batter into each muffin cup. Spoon 1/2 tsp jelly on top of batter. Fill muffin cups 3/4 full with remaining batter.
Microwave on HIGH (100% power) 4 to 4-1/2 mins. Rotate once after 3 mins.
In med bowl, combine cream cheese, powdered sugar & vanilla; mix well. Frost each Jelly Head. Decorate with candy &/OR fruit to create fun faces, if desired.
