List of Ingredients
8 flour tortillas
2 cups refried beans
4 cups cooked chicken meat, shredded or cut into bite-sized pieces
2 cups prepared salsa
1/2 cup chopped onion
1/4 cup (1/2 stick) melted butter or margarine
1/4 cup crema mexicana or sour cream
1 tomato, chopped
1/4 cup chopped fresh cilantro
Recipe
Heat oven to 350. For each chimichanga, spoon 1/4 cup refried beans over the center of a tortilla. Top with 1/2 cup chicken, 1/4 cup
salsa and a couple of spoonfuls of chopped onion. Fold over left and
right tortilla sides, then top and bottom to form an envelope-like
packet. Place folded side down on a baking sheet. Brush chimichangas
with melted butter. Bake for 30 minutes, or until browned. Before
serving, drizzle with crema mexicana. Sprinkle chopped tomato and
cilantro over the top.
