Creamy Chicken Enchiladas (Mary)

List of Ingredients
Tortillas ( corn or flour )
3 large skinless boneless chicken breasts cooked and cubed ( I usually poach them in a water)
1/3 cup of chopped onion
2 cans cream of chicken soup
1 small container sour cream
1 small jar smooth taco sauce( mild or medium)
Shredded Pepper Jack
Recipe
Cook onion in a little oil until softened. Add cream of chicken soup and sour cream and bring to a low simmer. Add taco sauce and take off heat.
Take 1/3 of the sauce mixture and add to the cubed chicken. Heat up tortillas. Add some of the chicken mixture to each tortilla and roll up. Put in a 13x9 cassarole dish. Poor remaining sauce over top of enchiladas and sprinkle with shredded cheese. Bake in 350 degree oven for 20-30 minutes( until bubbly)
