Crockpot Mexican Style Rice and Cheese

List of Ingredients
1 15 oz can Mexican style or chili beans
1 14.5 oz can diced tomatoes with jalapeños, undrained
2 cups (8 oz) shredded Monterey Jack or Colby cheese, divided
1 1/2 cups uncooked converted long grain rice
1 large onion, finely chopped
1/2 pgk (4 0z) cream cheese
3 cloves garlic, minced
Recipe
Grease inside of crockpot. Combine beans, tomatoes, 1 cup of cheese, onion, cream cheese and garlic in crockpot, mix well.
Cover, cook on LOW 6-8 hours.
Sprinkle with remaining 1 cup cheese just before serving.
Makes 6-8 servings
