    Posted by: Melanie73 is the recipe I use when I crave home-made mac n' cheese. I got it from the land o'lakes website. It is sooooo good! Even my picky-eater DH loved it.

    List of Ingredients




    6 servings

    7oz(2 cups) dried, uncooked, elbow macaroni
    1/4 cup butter
    2 Tbls flour
    2 cups milk
    1 (8oz)pkg cream cheese, softened
    2 Tbls mustard, I like spicy deli or dijon
    1/2 tsp each salt and black pepper
    1 (8oz) pkg cheddar cheese, cubed or shredded
    1 cup bread crumbs
    2 Tbls butter, melted
    2 Tbls dried parsley

    Recipe



    Preheat oven to 400F. Cook macaroni according to pkg directions. Drain and set aside.
    Melt butter(1/4 cup), in a 3 quart saucepan until sizzling; stir in flour. Cook over medium heat, stirring constantly until smooth and bubbly (1 minute). Add milk, cream cheese, mustard, salt and pepper. Keep cooking; stirring constantly, until sauce is thickened (3-4 minutes). Stir in cooked macaroni and cheddar cheese. Spoon into ungreased 2 quart casserole dish. Stir together in a small bowl the bread crumbs, the melted butter and the dried parsley. Sprinkle overtop the macaroni. Bake in the oven, uncovered, for 15-20 minutes, or until heated thru and golden brown.
    *This dish re-heats very well.
