Posted by: cllw***********For anyone that makes this, drain your peaches well~I think I will add another tsp. of the tapioca to be sure it is firm for cutting at the fair. This is a great recipe for an easy peach pie

List of Ingredients

3 c. sliced canned peaches, drain
and reserve syrup
1/2 c. brown sugar, packed
1/3 c. reserved peach syrup
2 Tblsp. lemon juice
2 Tblsp. cornstarch
1/8 tsp. salt
1/4 tsp. almond extract



Recipe

Mix all ingrediants together, place in pie shell, dot with 2 Tblsp. butter. Top with second crust.
Bake 400 degrees for 45 minutes


I will use 3-4 Tablespoons of instant tapioca in place of every 2 tablespoons of corn starch. That seems to make a denser slice of pie.
