    List of Ingredients




    9 inch deep dish pie shell
    1 tablespoon butter or margarine
    1 large onion, minced
    1/2 cup finely chopped mushrooms
    1 or 2 cloves of garlic, minced
    6 large sun ripened tomatoes, divided
    1/3 cup minced fresh basil leaves
    2 tablespoons minced fresh flat leaf parsley
    1 teaspoon seasoned salt (I prefer Nature's Seasons)
    1/4 teaspoon pepper
    1/2 cup mayonnaise
    1 1/3 cups shredded cheese (mozzarella, cheddar,
    Swiss, or whatever you prefer)
    1/2 cup freshly grated Parmesan cheese (or buy it
    already shredded)

    Preheat oven to 350° and bake pie shell 15 minutes.
    Cool. Melt butter or margarine in a skillet and sook
    onions, mushrooms, and garlic just until onions are
    tender but not browned. Set aside to cool. Dip 5 of
    the tomatoes into boiling water just until the skins
    crack, about 30 seconds each. Remove skins and core
    end. Cut each tomato into 6 wedges and set aside.
    Combine basil, parsley, salt, pepper, mayonnaise, and
    shredded mozzarella (or cheese being used). Add the
    cooled onion mixture. Arrange the tomato wedges in the
    pie shell with the skin side down. Carefully pour the
    cheese mixture over tomatoes. Remove skin from the
    remaining tomato and cut it into slices. Overlap the
    slices around the edge of the pie. Sprinkle with the
    Parmesan cheese. Bake at 350° until browned and
    bubbling hot all through, about 30 to 35 minutes.
    Serve immediately. 6 servings.
