    Here is my simple, yet DELICIOUS recipe for scalloped potates. My MIL makes them like this & when I tasted hers, I knew I would NEVER make them any other way. Peel potatoes & slice THIN as possible. Peel some onion and slice THIN as possible. (I use my meat slicer) Spray a pan, (I use a 9x13) and put a layer of potatoes,salt and pepper to taste & dot some margarine on top. Sprinkle on some shredded SHRAP cheddar & shredded Velveeta, repeat the layer. Pour about 1/2 cup milk over top. Cover LOOSELY and bake about 1 1/2 hrs - 2 hrs at 300 degrees.

    Check occasionally to be sure they stay moist, not WET, but you don't want them to dry out either. Mine never have. We also like to add chopped ham in the layers and this is a main dish for us, especially in the winter
