I love them as garlic mashed potatoes with some of the skins left on OR this way. Don't peel them, just cut them into bite-sized pieces. Put them in a 13x9 inch pan and pour 1/2 cup melted butter over them. Sprinkle on a package of onion soup mix and roast at 325º till tender. Usually about half an hour. Depends on the size of the pieces.
