Preheat oven to 450º.
In a large roasting pan combine 3 tablespoons olive oil, 1 pound each sweet potatoes (yams) and baking potatoes unpeeled and cut into 2-inch cubes, 4 unpeeled cloves garlic; toss to coat.
Bake, shaking the pan every 15 minutes, until potatoes are browned and crisp and garlic is soft, about 45 to 60 minutesRecipe
Remove garlic, press cloves, and slip from the skins, discarding the skins. Toss the potatoes with garlic, 1/4 cup chopped parsley, 1 teaspoon dried thyme leaves, 1/2 teaspoon pepper, and salt to taste. Serve immediately. Serves 8.
