Scalloped Potatoes with Three Cheeses

Ingredients:
3/4 cup grated extra sharp cheddar cheese
3/4 cup crumbled danish blue cheese
1/3 cup of Packed grated parm cheese
4 pounds of russet potatoes
1-1/2 Tsp salt
1/2 Tsp pepper
1/4 cup finely chopped onion
3 Tbs flour
4 Tbs butter
3 cups of whole milk OR
(16oz of half and half and about a cup of milk instead of all milk)Recipe
Oven set at 400, Lightly butter a 13x9" baking dish.
Mix the cheeses together.
Arrange 1/2 of the potatoes in the prepared dish, overlapping slightly. Sprinkle with 1 Tsp salt and 1/4 Tsp of the pepper.
Sprinkle 1/2 of the onion mixture over, Then the flour. Dot with 2 Tbs of butter. Sprinkle with 1/2 of the cheese mixture. Top with the remaining potatoes, 3/4 Tsp salt, 1/4 Tsp pepper and 2 Tbs butter. Reserve remaining cheese.
Bring the milk to a simmer. Pour over the potatoes{ Milk will not cover completely} Cover the baking dish with foil. Bake for 45 minutes. Uncover{ Mixture will look curdled}
Sprinkle with the reserved cheese And bake uncovered for an additional 45 minutes.Allow to stand for a few minutes before serving.
This can be prepared up to 2 hours ahead. Cover and rewarm in a 375 oven for about 20 minutes
