List of Ingredients
3 Tablespoons Butter
1 cup sliced celery
1/2 cup chopped onion
2 cloves garlic, minced
1 10oz. can chicken broth
1/4 cup water
4 cups cubed potatoes
1 cup julienne cut carrots(may add less)
1/8 tsp. pepper
chopped fresh parsley
Recipe
In a 10 inch skillet over med. heat; add butter,celery, onion,and garlic. Cook until veggies are tender. Add broth, water, potatoes, carrots and pepper to skillet. Heat until it comes to a boil, then reduce heat to LOW. Cover;simmerfor 15 mins. or until veggies are tender. Uncover; over med. heat simmer until the broth starts to thicken. Sprinkle with parsley before serving. Makes 6 servings
Note: When us kids were all home we would tell our mom ...Make us some of those "Soupy Potatoes" That's what we'd call this recipe.
