Southwest Chili Pouch Potatoes

List of Ingredients
1 1/3 lb. (4 medium) potatoes, Cut into 1/2 inch cubes
1 lb. Lean ground turkey
1 15 oz. Can black beans, rinsed and drained
1 14 1/2 oz can stewed tomatoes
1 Medium onion
1/4 c. chili powder
1 1/2 Tsp. Salt
1/2 c. diced tomato
1/4 c. non-fat sour cream Recipe
Oven Temp:450 degrees
In bowl, mix all ingredients except diced tomatoes and sour cream; divide among 4 sheets of aluminum foil (12 inches square) about 1 1/2 c. each. Place mixture on right side of foil squares. Fold left side of foil over the right and make 2-3 1/2 inch folds all the way around. Make sure to leave room for heat to circulate in pouch. Place on baking sheet and bake at center of the oven for 35 minutes. To open pouches, use scissors to cut a cross in the top of each, then pull back points, being careful as steam is released.
Top each pouch with 2 tablespoons tomatoes and 1 tablespoon sour cream
