List of Ingredients
2-1/4 pounds of small red potatoes, coarsley chopped
( I used ap as that's what I had on hand and I peeled them)
14-1/2 oz can of diced tomatoes, drained( I used all Garden fresh Cherry and Sweet 100's tomatoes, chopped)
1 large onion, chopped
1/2 cup of sour cream(optional)
8-oz carton of sour cream
Chopped fresh tomatoes( optional)
1 cup of shredded Jack cheese
Avocados(optional)
1 cup shredded cheddar cheese
sliced green onions( optional)
1/4 cup melted butter( did not use)
1/2 tsp salt( did not use)
1/4-1/2 tsp red pepperRecipe
Cook the potatoes and onion in a small amount of water till tender about 15 minutes. Drain. Stir in the 8-oz of sour cream, cheeses, melted butter, salt and pepper. Stir in diced tomatoes. Spoon into a 2 Qt rectangular baking dish and bake at 350 for about 30 minutes or until heated through. Top with remaining 1/2 cup of sour cream and all optionals~
I added the cheese first , then I added all remaining ingredients. I used a little sprinkle of Butter Buds in place of the butter and I used none of the optionals. If you prepare this and plan on eating it right away it will not need that 30 minutes of baking and it will retain some chunkyness. Mine was more like a mashed potato. No problem~ Yum~ Janie~ I also spray the dish with cooking spray~
