2 eggs, separated
2 squares baking chocolate, melted
4 tablespoons hot water
1/2 cup sugar
4 tablespoons cornstarch
2 cups milk
1 teaspoon vanilla
1 baked pie shellRecipe
Separate eggs and set aside, if using meringue. Combine melted chocolate with hot water and let cool slightly. Combine sugar and cornstarch and set aside. Beat egg yolks until light (if not using meringue, beat the whole eggs). Stir in sugar mixture and then the chocolate/water mixture. Heat the milk just until it begins to steam around the edges, but don't let it come to a boil. Remove from heat and gradually stir in the other mixture until smooth. Cook in a double boiler over simmering water until thick. Pour into the baked pie shell and chill before serving. If using meringue, add only the egg yolks to the filling mixture above. After cooking the filling and putting it in the pie shell, beat the egg whites with 2 tablespoons of additional sugar until stiff peaks form. Pile on top of the pie and bake at 325° until lightly browned, about 8 to 10 minutes. Chill before cutting and serving
