    Combine in and put on stove at medium heat.

    2/3 cup sugar
    1/3 cup cornstarch
    2 Tbs. Flour
    ½ tsp salt

    Add 3 eggs until well incorporated, stirring constantly. Add 3 cups milk, continue stirring, about 5 min until starts to boil, then stir for 1 minute. Remove from heat.

    Add 1 Tbs. Butter, 2 tsp vanilla and 1 1/3 cup sweetened flaked coconut. Mix all together and pour into baked pie shell. Place plastic wrap over top and refrigerate for 6 hours.

    Top with whipped cream (I used Cool whip)


    Mr. Food's Easy As Pie: My Own Pie Crust

    1-1/2 Cup Flour
    1 Teaspoon Salt
    2 Tablespoons Sugar
    1/2 Cup Oil
    2 Tablespoons Cold Milk

    All we do is sift (with a sifter or even with a plain strainer), 1-1/2 cups flour with 1 teaspoon salt and 2 tablespoons sugar right into the pie plate. In a measuring cup, beat together 1/2 cup oil and 2 tablespoons cold milk. Pour that right over the flour, give it a quick mix with a fork, just enough to moisten the flour, and press it into the pie plate. Now we can prick it all over with a fork and bake it at 425°F. for about 15 minutes.This is THE BEST pie crust for those who don't like to make pies. It tastes like a cross between Graham Cracker and Regular crust. It is only for a bottom crust so it is great for Cream pies, custards, Dutch Apple and Pumpkin
