List of Ingredients
2 cups evaporated milk (one large can)
· 1 - 1 1/4 cup can pumpkin
· 3/4 cup sugar
· 1/2 tsp. salt
· 1/4 tsp. ginger
· 2 tbsp. cornstarch
· 1 tsp. cinnamon
· 1/2 tsp. nutmeg
· 1/4 tsp. cloves
· 2 egg yokes
· Whipped cream
Recipe
In a large pot, boil all the ingredients together -- except egg yokes -- until thick, approximately 15 minutes, stirring so no lumps will form. Pour a little of the hot liquid over the egg yokes (to avoid scrambling), then add to the remaining mixture. Let it cool. Pour into baked shell and top with whipped cream and garnish with pecans
The filling is very easy to make and tastes very good, but the consistency makes a better pudding than a pie. It was great in the custard cups with a dollop of whipped cream on top.
I do love pumpkin pie but I think I like the traditional better, this is like a mousse sp. it does free up the oven
