    3 cups frozen shredded hash browns, thawed
    1/3 cup oleo
    1 cup diced, fully cooked ham or sausage
    1/4 cup diced bell pepper
    1 cup shredded cheddar cheese
    2 eggs
    1/2 cup milk
    1/2 tsp salt
    1/4 tsp pepper

    Recipe



    Press hash browns between paper towels to remove excess moisture. Press into bottom and up sides of an ungreased 9" pie pan. Drizzle with melted oleo. Bake uncovered at 400 to 425 degrees for 25 minutes.

    Combine ham, bell pepper and cheese. Spoon into crust.

    In a small bowl beat eggs, milk, salt and pepper. Pour over all.

    Reduce heat to 350 degrees and bake uncovered for 25 to 30 minutes or until knife inserted near center comes out clean. Let stand 10 minutes before cutting.


    I added some dried chopped onion, shredded swiss cheese and little bit of hot pepper cheese...left out the green pepper. I used some sliced ham
    that I had for sandwiches instead of cubed..tore it in small pcs.
    I only used 1/4C butter as it covered the hashbrowns nicely.This recipe is a keeper..I'll make it again..thanks for posting this, whoever you are...barb
