List of Ingredients
¼ cup butter
1/3 cup chopped almonds, toasted
1 onion, chopped
1 carrot, chopped or shredded
1 clove garlic, minced
1/3 cup chopped parsley
1/3 cup barley
1/3 cup brown rice
1/3 cup bulgur
2½ cups chicken broth
¼ cup dry sherry
¾ teaspoon basil
¾ teaspoon oregano
Salt and pepperRecipe
In 3-quart pan over medium-high melt butter and cook onion, carrot, garlic and parsley, stirring frequently, until limp. Add barley, rice and bulgur; cook, stirring, until lightly browned. Add broth, sherry, basil and oregano. Bring to boiling, then reduce heat, cover and simmer until tender, about 45 minutes. Remove from heat and let stand covered 10 minutes. Salt and pepper to taste. Garnish with nuts. 6 servings.
Nice chewy pilaf with crunch from almonds. I doubled the garlic.
