List of Ingredients
2 Tbl. olive oil
1 medium onion, finely chopped
1 small red or green bell pepper, finely chopped
5 cloves garlic, pressed
28 oz. can crushed tomatoes
1/3 cup dry red wine
1 Tbl. dried Italian herbs*
1 1/2 tsp. crushed chile peppers
1/4 tsp. fennel seeds, crushed
2 bay leaves
1/2 tsp. salt
a few grinds black pepper
2 tsp. brown sugar
Recipe
Heat oil in a dutch oven. Saute onions, peppers and garlic, stirring often, until soft. Add remaining ingredients and bring to a boil. Reduce heat and simmer gently, uncovered, for 20 minutes, stirring often.
Makes about 4 cups (enough for two 15" pizzas). I usually make one pizza and freeze the other half for next time.
* I like McCormick's Italian Seasoning blend, but you can use any combination of dried herbs like marjoram, thyme, rosemary, savory, sage, oregano, basil, etc.
