    1/4 cup vegetable oil
    1/3 cup onion, finely diced
    2 cloves garlic, finely minced
    2 tbsp flour
    1/2 cup red chili powder
    1/2 tsp ground cumin
    1/2 tsp ground coriander
    2 cups chicken stock (broth), heated
    Salt to taste

    Recipe



    In a medium saucepan, place the vegetable oil and heat it on medium high heat until it is hot, Add onions and garlic, and sauté them for 5 minutes, or until the onions are tender.
    (I add the garlic towards the end of this process) Add flour and whisk it briskly for 3 minutes. Add the red chili powder, cumin, and coriander, and whisk them for 2 minutes.
    While whisking constantly, slowly add the heated chicken stock. Continue to whisk the sauce for 5 minutes or until it thickens. Add salt and whisk to incorporate.
    Makes 2-1/2 to 3 cups
