    List of Ingredients




    2 cups chicken broth
    4 large potatoes, peeled, diced
    2 stalks celery, chopped
    2 carrots, finely shredded
    1/2 onion, chopped
    4 cups milk
    12 slices Velveeta cheese
    1/4 cup dry potato flakes
    1/2 pound bacon, fried, crumbled

    Recipe



    In a large kettle, combine broth, potatoes, celery and onion. Mix well and cook to a boil; cook until vegetables are tender. Lower heat to simmer and add milk. Add cheese and stir often to fold in as it melts. Slowly stir in potato flakes until mixture reaches your preferred consistency. Fold in bacon and serve.

    Note: I have used the potato flakes rather than cornstarch or flour for thickening as they add to the flavor, but if you prefer you can thicken as you desire
