List of Ingredients
1/2 c butter
3 shallots, minced
1 1/2 c sliced mushrooms
1/2 c flour
5 c chicken stock
sherry to taste
3/4 c heavy cream
salt and pepper to taste
Recipe
Saute shallots and mushrooms in butter. Don't let butter turn brown (medium heat). Cook until mushrooms begin to wilt. Stir in flour (makes a roux). Add chicken stock and sherry. Stir with wire whisk until smooth. Bring to a boil. Boil until thickened. Put 1/2 mixture into a blender. Puree. Ladle 1 ladle of soup into cream. Mix. Pour cream into mixture and heat through.
This is so good. I wouldn't omit the sherry.
The base of this soup can be used for Cream of Broccoli, Cauliflower, Asparagus, Celery, You Name It.
