List of Ingredients
2 tbsp Butter
1 Onion, sliced
2 tbsp Flour
1 1/2 cups Chicken Stock (oxo cubes)
3 cups Broccoli, fresh
1/4 tsp Pepper
1/2 tsp Salt
1 1/2 cups Milk OR 3/4 cup each Cream & Milk
500 gm Velveeta Cheese, cubed
1/4 tsp Tabasco Sauce
2 tsp Parsley
Recipe
Melt butter in fry pan, cook onions til tender, stir in 2 tbsp flour. Set aside, whisk chicken stock so oxo cubes melt. Add brocoli; cut up into pieces and bring to a boil. Reduce heat and simmer 10 minutes. Puree brocoli and stock mixture (leave some florets whole). Return to heat along with fried onions, butter flour mixture, salt, pepper, milk, cheese Tabasco sauce and parsley. Let boil slightly. Serve with grated cheese in soup. Freezes well. Serves 4.
