    List of Ingredients




    2) 24 Ounce Bags Seasoned Croutons
    (2) Large Onions, Chopped
    (½) Cup Butter
    (7) Stalks Celery, Chopped
    (4) Cups Boiling Water
    (2) Pounds Seasoned Pork Sausage
    (2-3) tsp Ground Sage
    (2) tsp Dried Thyme Leaves
    (2) tsp Salt
    (2) tsp Freshly Ground Black Pepper
    (2) tsp Poultry Seasoning

    Place the seasoned croutons in a VERY LARGE BOWL. I use a large bread dough bowl. Slowly fry the chopped onions in the butter until tender, but not brown. Pour the onions and the butter from the skillet into the croutons. Place the chopped celery in the boiling waters and boil the celery until tender. Pour the celery and its cooking water into the crouton mixture. Fry the sausage until nicely browned. Drain the sausage and add to the crouton mixture. Add the seasonings. The exact measurements cannot be given...I have given you 'approximations', as I never measure the ingredients. You have to taste as you go, depending upon how seasoned you like your stuffing. Remember, the seasonings will grow stronger as the stuffing bakes. When you stuff the turkey, be careful not to pack it too tightly, as the stuffing expands as it cooks and sometimes it can explode out the turkey cavities. I developed this recipe myself, combining several techniques from my aunts and mother. As far as my family is concerned, the only good reason to have turkey is to serve as a container to cook the dressing. The juiciest dressing is that which can be placed in the cavity of the turkey. However, for us, that is not enough! I usually buy two turkey breasts and set them on end in a greased Nesco roaster and add the remaining dressing, such that the turkey moistness and flavor are imparted through the dressing. You can never have enough of the dressing! Stuffing for a 20# Turkey.
