    Posted by: rosiepie***********Here is a zucchini recipe we love. I got it here a few years ago. Kathyf1 posted it. This makes a wonderful vegetarian main dish, served hot, cold or room temperature

    List of Ingredients




    1 onion, finely chopped
    1/2 C vegetable oil
    1/2 C grated parmesan cheese
    4 eggs, beaten
    1 Tbsp minced fresh parsley (or 1 tsp dried)
    3 C shredded zucchini (don't peel)
    1 C bisquick
    1 C shredded cheddar cheese

    Recipe



    In bowl combine first 5 ingredients. Stir in zucchini, bisquick, and cheese.

    Pour into 2 greased pie plates

    Bake 35 mins until golden brown
