    List of Ingredients




    4 cups shredded zucchini
    2 eggs, slightly beaten
    1/3 cup fine-chopped onion
    3 tsp chopped parsley
    1 tsp salt
    ½ tsp curry powder (optional)
    1/4 tsp pepper
    1/4 cup flour
    1 to 2 tbsp oil
    sour cream

    Recipe



    Wrap shredded zucchini in a linen towel and twist ends of towel to wring out excess moisture from zucchini. Combine zucchini, eggs, onions, parsley, salt, curry powder and pepper. Blend well, stir in flour. In a skillet over medium heat, heat 1 tbsp oil. Drop batter by rounded tbsps into hot oil. Cook until nicely browned on each side. Repeat until all batter is used, adding additional oil as necessary. Serve with sour cream.
