    * If cake with pudding already in mix is used, omit pudding mix.

    List of Ingredients




    18 1/2 ounce pkg yellow cake mix
    3 3/4 ounce pkg instant vanilla pudding and pie filling *
    1 1/4 cups Coco Lopez cream of coconut
    1/2 cup + 2 tbls rum
    1/3 cup vegetable oil
    4 eggs
    8 ounce can crushed pineapple in juice, well drained
    whipped topping, garnish
    pineapple slices, garnish
    maraschino cherries, garnish

    Recipe



    1. Preheat oven 350°F.

    2. In large mixing bowl, combine cake mix, pudding mix 1/2 cup cream of coconut, 1/2 cup rum, oil and eggs.

    3. Beat at medium speed 2 minutes. Stir in pineapple

    4. Pour into well greased and floured 10 inch tube pan or 9 X 14 X 2.

    5. Bake 50 to 55 minutes. Cool slightly. Remove from pan

    6. With a meat thermometer, poke holes about 1 inch apart in cake almost to bottom.

    7. Combine remaining cream of coconut and rum. Pour over cake

    8. Chill thoroughly, garnish and store in refrigerator
