    1 pound ground beef
    1 package taco seasoning mix
    12 corn tortillas
    2 teaspoons shortening
    1 pint sour cream
    4 ounces can chopped green chilies
    1 cup Monterey jack cheese, shredded
    1/2 cup water
    Jalapenos, optional

    Recipe



    1. Mix ground meat and taco seasoning mix with 1/2 cup water and simmer 15 minutes.

    2. Fry tortillas in hot shortening to soften. Drain.

    3. Fill each with two tablespoons beef mixture. Roll and place seam down in greased shallow baking dish.

    4. In saucepan, heat sour cream and drained green chilies to thin sauce.

    5. Cover enchiladas with sour cream mixture. Sprinkle with shredded cheese.

    6. Garnish with jalapenos if desired.

    7. Cover with aluminum foil. Bake at 325°F. for 15 to 25 minutes

    8. Remove cover 3 to 5 minutes to brown lightly
