    Marinated Vegetables - Italian

    List of Ingredients

    1/2 head cauliflower, broken into flowerettes
    4 carrots, sliced
    2 stalks celery, cut into 3/4 in. strips
    1 green pepper, cut into 3/4 in. square pieces
    1/2 pound fresh mushrooms, stems removed and cut in half
    3 ounces pimento-stuffed green olives, drained
    1 cup pitted ripe olive, drained
    1 medium onion, cut in bite size pieces
    2 cloves garlic, minced very fine
    3/4 cup white wine vinegar
    1 tablespoon white vinegar
    1/2 cup plus 1 T. olive oil
    1/4 cup water
    2 tablespoons sugar
    1/2 teaspoon salt
    1/2 teaspoon oregano

    Recipe

    1. Place first 9 ingredients in large bowl.

    2. Combine vinegar & remaining ingredients in a small sauce pan; cook over med. heat stirring constantly until mixture boils.

    3. Remove from heat, and pour over vegetables. Toss gently to coat.

    4. Cover and chill at least 8 hours, stirring several times.

    5. Drain and serve in glass dish.
