Eggplant Lasagna

1 large onion, chopped
olive oil
1 teaspoon oregano
1/2 teaspoon black pepper
1 medium to large eggplant*
garlic powder
1 1/2 cups spaghetti sauce
8 ounces ricotta cheese
2 cups mozzarella cheese, shredded
Recipe
1. *Before starting, slice the eggplant into 1/4 inch slices, place on a cookie sheet or paper towels, and sprinkle both sides with salt. Allow to sit for 20 - 30 minutes, then rinse
2. Chop onion and place in large skillet with about a tablespoon of olive oil. Sprinkle with oregano and pepper. Cook until the onions are limp. Set aside in a small bowl
3. Add approx. 2 tablespoons olive oil to the hot skillet, and place sliced eggplant into it. sprinkle with garlic powder (repeat this on the other side when you turn them). Cook on medium heat, allowing the eggplant to cook and brown on both sides.
4. While the eggplant is cooking, prepare a 9 X 9 pan (or casserole dish) by spraying with non-stick spray. Spread about 1/2 cup of sauce on the bottom of the pan.
5. Place a layer of eggplant slices on the sauce. Top it with the sauteed onions. Next, spread ricotta cheese on the eggplant, followed by some mozzarella cheese. Add the rest of the spaghetti sauce, followed by a second layer of eggplant. Top this with more mozzarella cheese.
6. Bake uncovered at 350°F for 30 minutes.
