Recipe Introduction
This dish is best when topped with sour cream and served with tortilla chips.
List of Ingredients
2 lbs ground beef, cooked and drained
1 jar of salsa
1 package of taco seasoning
1 can sweet corn (may also use Mexi-Corn), drained
1 can Spanish rice (hard to find - may use bag of Spanish rice which you will have to cook)
1 large bell pepper, chopped
1 medium onion, chopped
2 cups shredded sharp cheddar cheese
Green olives, sliced (optional)
Sour cream (optional)
Recipe
After browning and draining ground beef, mix all ingredients together (except for olives and sour cream) and simmer 1 hour in crock pot. This dish may also be cooked on the stove top in a large pot. Garnish with sour cream and olives; serve with tortilla chips.
Great for a football game!
