    Recipe Introduction


    This recipe was handed down to me by my mother, I have made a few modifications to it.


    List of Ingredients


    • 5 lb. Bag of potatoes
    • 1 Green Bell Pepper
    • 1 Red Bell Pepper
    • Celery (depending on your taste)
    • 1-2 Bundles of green onions (depending on your taste)
    • Mayonnaise
    • dijonnaise (about 1 cup)
    • dozen hard boiled eggs


    Instructions


    1. Peel, and dice potatoes. Rinse the potatoes, and boil them until soft. Hard boil the eggs at the same time.
    2. Drain potatoes. Let them cool while you peel the eggs and dice the vegetables. Add everything into a big bowl and mix together. Add Mayonnaise and dijonnaise to the salad. Enough Mayonnaise to cover everything and mix well. Chill for a couple of hrs. Serve.


    Final Comments


    This is really good made the night before, so that all the flavors blend in together overnight.
