Potato Salad

Recipe Introduction
This recipe was handed down to me by my mother, I have made a few modifications to it.
List of Ingredients
- 5 lb. Bag of potatoes
- 1 Green Bell Pepper
- 1 Red Bell Pepper
- Celery (depending on your taste)
- 1-2 Bundles of green onions (depending on your taste)
- Mayonnaise
- dijonnaise (about 1 cup)
- dozen hard boiled eggs
Instructions
- Peel, and dice potatoes. Rinse the potatoes, and boil them until soft. Hard boil the eggs at the same time.
- Drain potatoes. Let them cool while you peel the eggs and dice the vegetables. Add everything into a big bowl and mix together. Add Mayonnaise and dijonnaise to the salad. Enough Mayonnaise to cover everything and mix well. Chill for a couple of hrs. Serve.
Final Comments
This is really good made the night before, so that all the flavors blend in together overnight.
