Gingerbread

List of Ingredients
1 C ground almonds ( could use almond flour, but I don't know how much that equates to)
1/2 C vanilla whey protein powder
1 tsp baking soda
1/2 tsp salt
2 1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 C Splenda
1/2 C plain yogurt
1/4 C oil
1 tsp blackstrap molasses
1 egg
2 Tbl water
1/2 C shredded zucchini
Recipe
Preheat oven to 350 F
Combine dry ingredients (first 7) and stir to mix well.
In a separate bowl, stir together the remaining ingreds, except the zucchini.
Add the dry ingredients to the wet, and combine until there are no dry spots. Gently stir in the zucchini.
Spray an 8x8 inch baking pan with nonstick cooking spray, and pour the batter into the pan and smooth it out.
Bake for 30 minutes, or until a toothpick inserted in the middle comes out clean.
9 Servings, each w/ 9 g carbs, trace fiber, 17 g protein.
Not super-low carb, but delicious, and a very good amount of protein. Awesome with the cream cheese frosting.
Note: I doubled the recipe and made it in a 9x13 pan ("brownie" pan) and it came out great.
