    1 1/4 cups unbleached all-purpose flour
    1 tsp. baking powder
    1 tsp. ground cinnamon
    1 tsp. ground ginger
    1/4 tsp. ground cloves
    1/4 tsp. salt
    1/4 cup prune puree, applesauce, or mashed banana*(Tami, I used baby prunes)
    1/4 cup brown sugar, firmly packed
    3/4 tsp. baking soda
    1/2 cup molasses
    3/4 cup boiling water
    2 egg whites, lightly beaten
    3/4 cups raisins** (Tami's note I skipped these to keep the points down)

    Low-Fat Gingerbread, And It Doesn't Even Taste Like Cardboard!

    The Bottom Line This low-fat gingerbread was a real hit around my house. With only .2 grams of fat per serving, how can you go wrong?

    Introduction..

    Continuing with my recipe-posting spree, here's another wonderful low-fat recipe. For those of you who are dieting but don't want to make your kids suffer too, here's a great treat for the entire family. :) This recipe was sent to me by a friend of mine, I'm not entirely sure where she got it, but it's wonderful! Enjoy!


    *Never one for prune puree, I generally use applesauce and it comes out wonderfully. Don't use the applesauce with the chunks unless you want an unpleasant surprise when you bite into that gingerbread! :)

    **You can omit the raisins from this recipe, and it doesn't suffer. Savannah is not a raisin fan at all, so I generally make mine without.

    Baking Directions..

    1. Preheat oven to 325F degrees.

    2. Line the bottom of an 8-inch square baking pan with a baking pan liner or lightly spray with vegetable cooking spray then, sprinkle with a little flour, just enough to coat it lightly.

    3. Sift flour, baking powder, cinnamon, ginger, cloves, and salt together in a mixing bowl.

    4. Combine prune puree, applesauce, or mashed banana and the sugar in a separate bowl. Stir in 1/2 teaspoon of the baking soda and the molasses.

    5. Add the remaining 1/4 teaspoon of baking soda to the boiling water.

    6. Alternate adding the prune puree mixture and the boiling water to the flour mixture, stirring to combine.

    7. Add the egg whites and raisins.

    8. Pour cake batter to the baking pan. Bake for 30 minutes or until a wooden pick inserted in the center of the cake comes out clean.

    9. Remove from pan and cool on wire rack.*

    *As always, PLEASE be careful of little hands near the hot pan while it's cooling. I generally place mine to the back of a counter or the top of the stove while letting it cool, making it harder to reach for the little guys.

    I generally cut this up into about 8 good-sized portions, or smaller depending on how large you want them, or how small the mouth is that's going to be eating them. :)
