    1 C chopped zucchini
    1 lge. tomato chopped (about 1 Cup)
    1 C chopped onion
    1/3 C grated parmesan cheese
    1/2 C Low Fat Bisquik
    1 C FF milk
    1/2 C eggbeaters

    Spray pie pan with PAM. Set oven @ 400 deg.

    Layer zucchini, tomato, onion & cheese in pan. Mix bisquik, milk and eggbeaters together and pour over veggies. Bake about 35 min. or until knife comes out clean. Cool 5 min. and serve.
