l (2 layer) lemon cake mix
2 cups frozen whipped toppping, thawed
l egg beaten
l tsp. lemon extract
Confectioner's sugar
Recipe
Combine dry cake mix, whipped topping, egg, and extract. Stir together until well mixed. With hands dusted with confectioner's sugar, shape dough into small balls and roll in confectioner's sugar.
Bake in preheated 350 degree oven on greased cookie sheets for 10 minutes. They will puff up and when they begin to settle down they are done. They should be slightly soft when you take them from the oven. Do not overbake.
These freeze well. The recipe can be varied with choc. cake and vanilla extract.
