    1 (2 cup bag) Uncle Ben's Boil-in-bag rice
    1 lb. whole pork tenderloin
    1 tablespoon oil
    2 teaspoons minced garlic
    2 teaspoons minced ginger
    1 pkg. (16 oz) frozen stir fry vegetable medley
    2/3 c. bbq sauce
    2 tablespoons chopped fresh cilantro (optional)
    1/4 c. water

    Recipe



    Cook rice according to package directions.

    Trim tenderloin of any fat; cut in half lengthwise, then into 1/4" slices.

    Heat oil in large skillet over medium-high heat until hot. Add pork, garlic and ginger; cook about 3 minutes or until pork is no longer pink.

    Add vegetables and 1/4 c. water. Cover; cook 3 minutes, stirring occasionally.

    Stir in bbq sauce. Cover; reduce heat and simmer 5 to 7 minutes or just until vegetables are tender and pork is cooked through.

    Serve pork and vegetables over rice. Garnish with chopped cilantro, if desired.

    Serves 4
