1 pound boneless chicken breast
1 cup salsa or picante sauce
1 package taco seasoning mix
2 cups water
2 cups minute rice, uncooked
1 cup canned black beans, drained
1 cup cheddar or Mexican cheese; shredded
sour cream




Recipe



Bring chicken, salsa, taco seasoning, and water to boil in largeskillet; cover. Simmer 10 minutes. Return to boil. Stir in rice and beans. Sprinkle with cheese; cover. Cook on low heat 5 minutes. Top with sour cream if desired.
