Beef and Mushroom Dijon

1 lb. boneless beef sirloin steak, 3/4" thick
2 tablespoons veg. oil
2 cups sliced mushrooms
1 medium onion; sliced
1 can cream of mushroom soup
1/2 c. water
2 tablespoons Dijon-style mustard
4 cups of cooked hot rice
Recipe
Slice beef in very thin strips. In a skillet over med-high heat, heat half of the oil. Cook beef in 2 batches until browned, stirring often. Set beef aside. Add remaining oil. Add mushrooms and onions. Cook over medium heat until tender. Add soup, water and mustard. Heat to a boil. Return
beef to pan. Heat through. Serve over rice. If desired, garnish with fresh chopped chives.
