6 cups large diced potatoes; may or may not peel
2 tablespoons veg. oil plus 2 tablespoons butter or margarine
1 can condensed french onion soup
Recipe
In a heavy skillet, heat the oil and butter; add potatoes and toss to coat. Stir occasionally to just begin to brown. Dump the soup over the top of all, turn up to high and bring to a boil. Cover and turn down to simmer. Cook for about 20 to 25 minutes or until potatoes are tender. Makes its own onion gravy.
