    Pumpkin Spice Bars with Frosting

    4 eggs
    2 cups sugar
    1 cup vegetable oil
    1 can pumpkin
    2 cups all-purpose flour
    2 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    2 tsp cinnamon
    1/2 tsp ginger
    1/4 tsp cloves
    1 cup raisins, optional

    Cream Cheese Frosting
    1 8-oz package cream cheese, softened
    1/4 cup butter, softened
    2 to 4 tsp milk
    1 tsp vanilla
    4 cups powdered sugar

    Recipe



    Heat oven to 350 degrees. Spray 15x10x1 inch pan with cooking spray.

    In a large bowl, beat eggs, sugar, oil and pumpkin until smooth. Stir in flour, baking powder, baking soda, salt, cinnamon, ginger and cloves. Stir in raisins if using. Spread in pan.

    Bake 25 to 30 minutes or until toothpick inserted in center comes out clean and bars spring back when touched lightly in the center. Cool completely.

    In medium bowl, beat cream cheese, butter, milk and vanilla until smooth. Gradually beat in powdered sugar, 1 cup at a time, on low speed until smooth and spreadable. Spread frosting over bars. Store covered in refrigerator.
