Butterscotch Oatmeal Cookies

1 1/4 cups all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
1/2 cup butterscotch chips
1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 egg, lightly beaten
1 tsp vanilla
3/4 cup uncooked old-fashioned oats
1/2 cup shredded coconut
1/2 cup chopped pecans

Preheat oven to 350°. Lightly grease cookie sheets; set aside. Combine flour, salt and baking soda in medium bowl.
Place butterscotch chips in small microwavable bowl. Microwave on High 1 minute; stir. Microwave at additional 30-second intervals until chips are melted and smooth.
Beat butter and sugars in a large bowl until light and fluffy. Add egg, melted butterscotch chips and vanilla; beat until well blended. Add flour mixture; beat just until blended. Stir in oats, coconut and pecans.
Shape dough by level tablespoons into balls; place 2 inches apart on prepared cookie sheets. Bake 10 to 12 minutes or until edges are lightly browned. Cool 1 minute on cookie sheets. Remove to wire racks to cool completely.
