Mexican Skillet Tamale Casserole

1 pound ground chuck
1 cup frozen corn kernels, thawed
1 (4-oz) can chopped green chilies
1 (8-oz) can tomato sauce
1/2 cup water
1 package taco seasoning mix
1/2 tsp ground cumin
1/2 cup biscuit baking mix
1 cup whole milk
2 large eggs
6 oz Monterey jack, shredded or Mexican four cheese blend
Sour cream, sliced olives, chopped tomatoes and chopped cilantro for garnishes if desired
Recipe
Preheat oven to 400°. Brown meat over medium-high heat. Drain and return to skillet. Stir in corn, chilies, tomato sauce, water, taco seasoning and cumin; remove from heat. Smooth mixture with a spoon.
In a small bowl, combine baking mix, milk and eggs. Stir until well blended; pour over meat mixture. Bake 40 minutes or until crust is golden and knife inserted in center comes out clean.
Sprinkle evenly with cheese. Let stand 5 minutes to allow cheese to melt and flavors to develop. Garnish as desired.
