    Mexican Tossed Layer Casserole

    List of Ingredients

    1 cup uncooked rice
    1 lb lean ground beef
    3/4 cup mild picante sauce
    1 tsp ground cumin
    2 cups shredded sharp Cheddar cheese, divided
    1/2 cup sour cream
    2 tbsp chopped cilantro
    1/2 tsp salt
    1/8 tsp ground red pepper

    Recipe

    Preheat oven to 350°. Lightly coat 11x7 inch baking dish with nonstick cooking spray; set aside.

    Cook rice according to directions on package. Meanwhile, brown beef, drain. Add picante sauce and cumin; stir well. Set aside.

    Remove cooked rice from heat. Add 1 cup Cheddar cheese, sour cream, green onion, cilantro, salt and red pepper. Toss gently to blend.

    Spoon rice mixture into prepared baking dish. Spoon beef mixture over all. Cover with aluminum foil. Bake 20 minutes or until heated through. Sprinkle with remaining cheese. Bake, uncovered, 3 minutes more or until cheese melts.
