Creamy Potato Sticks

We really liked this. Needed to add pepper and a bit more salt, but other than that it is perfect.
List of Ingredients
1/4 cup all-purpose flour
1/2 teaspoon salt
1-1/2 cups milk
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1/2 pound American cheese, cubed (Velveeta)
5-6 large baking potatoes, peeled
1 cup chopped onion

Preheat the oven to 350 degrees F.
In a saucepan, combine the flour and salt; gradually whisk in the milk until smooth. Bring to a boil; cook and stir for 2 minutes. Remove from the heat and whisk in the soup and cheese until smooth. Set aside.
Cut the potatoes into 4-by-1/2-by-1/2 inch sticks; place in a greased 13-by-9 inch baking dish. Sprinkle with onion and top with cheese sauce. Bake, uncovered, for 55-60 minutes or until potatoes are tender. Sprinkle with paprika and serve.
