    4 to 6 medium unpeeled baking potatoes
    2 cups shredded Cheddar cheese
    1 cup shredded Swiss cheese
    2 tbsp butter
    3 tbsp all-purpose flour
    2 1/2 cups milk
    2 tbsp Dijon mustard
    1/4 tsp salt
    1/4 tsp black pepper

    Recipe



    Preheat oven to 400°. Grease 13x9 inch baking dish.

    Cut potatoes into thin slices. Layer potatoes in prepared dish. Top with cheeses.

    Melt butter in medium saucepan over medium heat. Stir in flour; cook 1 minute. Stir in milk, mustard, salt and pepper; bring to a boil. Reduce heat and cook, stirring constantly, until mixture thickens. Pour mixture over cheese. Cover pan with foil.

    Bake 30 minutes. Remove foil and bake for 15 to 20 minutes or until potatoes are tender and top is brown. Remove from oven; let stand 10 minutes before serving.
