1-1/2 lb boneless skinless chicken breast
2 Tbsp butter
salt and pepper to season
1 cup heavy cream
1/2 cup chicken broth
1 tsp garlic powder
1 tsp Italian seasoning
1 cup parmesan cheese divided
1 cup spinach chopped
1/2 cup sundried tomatoes
Recipe
Melt butter in a large skillet, season chicken with salt and pepper, add chicken to pan and cook 3 to 5 minutes per side or until cooked through. Set chicken aside. Add cream, broth, seasonings, 1/2 cup of the parmesan cheese to the pan and whisk until starting to thicken, add remaining 1/2 cup parmesan cheese, stir then add spinach and sundried tomatoes. Simmer until spinach starts to wilt, add chicken back to pan and coat with sauce. Serve over pasta if desired.
