    12 tablespoons unsalted butter, softened
    1 cup sugar
    1 tablespoon vanilla extract
    4 large eggs
    1/4 cup whole milk
    2 cups flour
    1 teaspoon baking powder
    1/4 teaspoon salt
    1 1/4 cups strawberries, sliced and dried well
    2 tablespoons coarse sanding sugar

    Recipe



    Preheat the oven to 350 degrees F.

    Flour and butter an 8x4-inch loaf pan.

    In the bowl of a stand mixer, add the butter and sugar on high speed, beating until light and fluffy, about 2-3 minutes.

    On medium speed, add the vanilla and eggs, one at a time, to the butter mixture.

    Add the milk to the butter mixture and continue beating until fully combined.

    Add the flour, baking powder, and salt to the butter mixture until just combined.

    Use a spatula to gently fold the strawberries into the batter.

    Pour the batter into the prepared pan.

    Sprinkle the top of the batter with the sanding sugar.

    Bake until golden brown and a knife inserted into the center comes out clean, about 1 hour.
